"Best Meatloaf EVER!"
Supper, according to Brianna tonight. I agree, it was pretty damn good! So even though I'm a "little of this, little of that" type of cook, I figured I'd post a rough estimate of the recipe for next time! Pardon the crappy pic!
Mexican Pork Meatloaf
2-2 1/2lbs ground pork
1 cup salsa
2 cups shredded mozz
1-2 tbs onion soup mix
1/2 cup oatmeal
1 egg
1/2 tsp celery seed
1/2 tsp basil
1/4 tsp cinnamon
1/2 tsp dried chili pepper
Mix everything together (preferably by hand to combine the best). Form into a loaf pan. Bake at 375F for 1 hour.

Menu Plan Monday
Sorry about suddenly disappearing. My Mozilla died and I had to figure out how to get everything working again. But I'm back!!!!
I am determined to go through the random foods in our house. I'm getting sick of over stuffed cupboards but "there's no food!". So.... unless there's a freaking awesome "stock-up" sale going on, I will be buying as little groceries as possible this month (other than dairy and produce).

Wednesday: Fish Sticks and Baked Onion Rings
Thursday: Taco Pie
Friday: YOYO (You're On Your Own)

Eating For Real
I read a blog post of a new bloggy friend today that made me think that I need to re-word my "rules for every diet" (which would be eat less, get off your ass). Another thing to think of.... stop eating the way you're "supposed" to. Who says your body really NEEDS 3 meals a day plus snacks. Who says you HAVE to eat everything on your plate. Who says you MUST have more just cause it tastes so freaking good?!
What ever happened to eating when you're hungry and only eating until you're full? I guess it probably started sometime back during the Great Depression or WWII when foods were rationed for which ever reasons. Those we times when you were lucky you were eating so damn right you were going to eat everything whether you wanted to or not!
However, while poverty is sometimes still an issue, for the most part, we can eat whenever and however much we want. Unfortunately it was ingrained into us from small children that we MUST eat breakfast, lunch and supper and set times, with snacks in between. We MUST eat everything we're served - "think of those starving children in Ethiopia!"
With the amount of cheap junk food//fast food out there, it's no wonder why Canada and the USA have such an obesity problem. If you notice, so often you'll see the low - middle income families eating a lot of McDonalds and Kraft Dinner. Why? It's cheap and makes kids happy. Now, what's the nutritional value of McDonalds and Kraft Dinner? Zip!
While it's hard to get out of habits, and it can be expensive to eat healthier, you need to have priorities. Is it important to get healthy? Of course! So make it your priority to change your eating habits! Can you do it on McDonalds and Kraft Dinner? No! So make it your priority to skip buying the latest magazines or your fancy coffee and buy fresh fruit and veggies instead! You need to make yourself a priority or why should anyone else?

Sprint to the Finish - Week 6
I missed out last week because of our family crisis. It's pretty well over now and I need to jump back on the band wagon! Since my last STTF weigh in I've only gained .6lbs. But I actually dropped to 168.8lbs in my missing time and and now up to 170.8 meaning a gain of 2lbs :( Time to kick butt!
Nurtitional:
I will drink 80+oz of water each day.
I will eat breakfast everyday *before* 10am.
Have a fruit smoothie at least once for lunch.
Have a salad for one meal at least 4 times this week. Garden fresh lettuce should make this easy!
Physical:
I will walk at least 7 miles this week.
I will do 2 days of my walk/run program.
Up doing weights to at least twice this week.
Go to bed before 11pm every night.

I will start tracking in Daily Plate again. I got back into it! And only went over my calorie goal once and it was only by about 140 cals, so not horrible.
I will drink 80+oz of water each day. I did it! On Saturday I was out of town (and hate bottled water), but still chugged back about 70oz in 4 hours to get my goal!
I will eat breakfast everyday *before* 10am. I actually managed to do this (though I forgot this morning lol)
Physical:
I will walk at least 6 miles this week. I did just over 6 miles. Unfortunately, too much of it was at too slow of a pace IMO.
I will do 2 days of my walk/run program. I have nothing but excuses as to why I didn't get this done, so I won't bother
I will do at least one days of weights. Check!
Weight: down 1.2lbs

Up doing weights to at least twice this week. I really have no upper body strength, so I want to make sure to keep up the muscles I DO have!
As a bonus, I re-did my measurements from 20lbs ago. I am A.M.A.Z.E.D.

Wooo! For the first time in any menu planning I've ever done, I actually made everything on my menu last week, on the days they were planned for!
Monday - Bean and Cheese Burrito Casserole (with ground beef)
Tuesday - A bunch of random/leftover stuff thrown in a pan and called supper lol
Wednesday - Spicy Chicken Casserole
Thursday - Spaghetti with Garlic, Olive Oil and Chili Pepper (made with regular pasta)

Saturday - Stuffing Quiche
Sunday - probably a BBQ, otherwise, Lee's cooking

I'm spending a lot of time and effort trying to not have to buy anything at the grocery store right now. Lee's lay off makes that hard to do, plus we have loads of food right here in our cupboards already. Lacking fresh stuff (dairy, produce...) makes it hard, but we're managing!

Berry Muffins
Got this great muffin recipe from one of my blogger friends. I switched it up a little so I'll post how I did it (you'll notice she used a strudel, I don't like strudel so skipped that whole part)
Ingredients
1 c white flour
1 c whole wheat flour
1 c white flour

1/2 c wheat bran
1 c rolled oats
1 T baking powder
1 t baking soda
1/2 t sea salt
1 c rolled oats
1 T baking powder
1 t baking soda
1/2 t sea salt
3/4 c honey
1 c plain yogurt
1 c plain yogurt
1/2 cup raspberry yogurt
1 6oz container of blueberry yogurt
1/2 c milk
3 T unsweetened applesauce
1 large egg
1 c each frozen blueberries and raspberries
Prepare muffin tins with non-stick cooking spray or paper cups. Preheat oven to 400 degrees. Mix dry muffin ingredients well. In a separate bowl, mix all wet ingredients except berries and beat together well. Pour the wet ingredients into the dry and beat firmly and quickly until just thoroughly moistened. Add berries and fold in gently. Divide into muffin tin. Bake for 15 minutes or until toothpick comes out clean. Cool 15 minutes in muffin tin and the move to a wire rack. Makes about 30-32 small muffins or 18 larger muffins. (Adjust cooking time for larger muffins.) ***This made 18 regular sized muffins and 18 mini muffins for me***

With the ingredients as I wrote them, it's only 104 calories per muffin and 2g fiber, 3g protein and less than a g of fat! Wooooo!
Lee says they compare in yumminess with Tim Horton's Fruit Explosion muffins. Which is aweeeeeesome considering the nutritional facts of my muffins compared to Tim's (360 cals and 11g of fat!)
